Vegetable Tortellini Soup

Ingredients
 1 tbsp butter
 3 3 ribs celery, chopped
 3 carrots, chopped
 1 onion, chopped
 1 yellow squash, chopped
 1 zucchini, chopped
 4 cups chicken stock
 28 oz canned tomatoes
 1 tsp Italian seasoning
 ½ tsp dried oregano
 ¼ tsp black pepper
 2 tsp garlic powder
 12 oz package tortellini (fresh OR dried)

In a large soup pot melt the butter and add the vegetables and saute until the onion is clear, about 7-10 minutes.

Add the broth, crushed tomatoes, seasonings, and bring to a slow boil stirring frequently.

Add the tortellini and simmer until the pasta is fully cooked.
