Tex Mex Casserole

Ingredients
 2 tsp oil
 1 onion, chopped
 ½ pepper, chopped
 1 tsp cumin
 ½ tsp salt
 150 g uncooked rice
 1 can cooked red beans
 2 tsp chili powder
 1 tsp each: garlic, chipotle powder, oregano, hot sauce
 400 g diced tomatoes
 400 ml water (or vegetable stock)
 Toppings: cheese, jalepenos, crushed tortilla chips, sour cream, salsa, cilantro, green onions
Directions

In a 9 x11 baking dish mix together the oil, onions, bell peppers, cumin, and salt. then bake at 200°C for 10-15 minutes or until the onions start to color at the edges.

Remove the dish from the oven then add all of the other ingredients except for the toppings. Stir well and bake for 30 minutes.

Remove from the oven, fluff the rice then top with cheese and put back in oven until the last amount of water is absorbed and the cheese has melted about 5-8 minutes.

Remove from oven and garnish as desired.
