Salted Cod Balls

Ingredients
 400 g salted cod, shredded
 400 g potatoes, boiled and mashed
 1 onion, diced
 2 cloves garlic, minced
 ½ tsp cayenne pepper
 3 tsp cilantro, minced
 3 tsp parsley, minced
 2 eggs
 200 g breadcrumbs
 salt and pepper, to taste
 500700 ml oil, for frying

In a hot frying pan with 1 tsp of oil, saute the onion and garlic until softened.

In a large bowl add the cod, potatoes, onion/garlic mixture, eggs, herbs and spices and mix well.

Shape the mixture into 4 or 5 cm balls and roll each of the balls in the breadcrumbs. Place on a plate or sheet until ready to cook.

Heat the oil to 180°C and then deep fry the cod fish balls in small batches for about 5 minutes, rotating if necessary, until completely browned. Repeat until all of the balls are fried.
