Weekly Lunches: #26

I have friends coming to visit today which is pretty exciting but it also means that my husband took off work for the next week so I won’t be making any lunches for a week which is fine, everyone deserves a break now and then.

Mushroom Bourguignon, egg noodles, salad, apple
Vegetable Lasagna, salad, tabbouleh, banana
Aloo Gobi Matar, yogurt with kiwi, blood orange
No fry sweet and sour chicken, rice, salad, kiwi
Nachos, Salad, apple

Recipe: Fleischnacka (Meat Snails)

This is a pretty unique recipe from the Alsatian region in France. It’s what you’d get if you combined stew, pasta, and a wrap all at once. While it does take a bit of time I found that you can freeze the rolls and then simply cook them right from the freezer which means this is a great ahead of time meal since the final steps after making the roll is fairly easy. In the future I would process the vegetables for a smoother consistency but I didn’t really mind the texture either, just made them a little harder to hold together.

Weekly Lunches: #25

I kind of made do this week because I’d forgotten a few things from my shopping list since we shopped on Sunday instead of Saturday but it turned out alright in the end. I’m trying to be consistent in quality but stubbornness and ice got in my way.

Fleischschnacka, salad, yogurt, grapes
Ratatouille risotto, carrots and hummus, apple
Spinach and goat cheese quiche, cherry tomatoes, orange
Homemade Spaghettios, quick naan, grapes
Tabbouleh, carrots and hummus, yogurt with raisins, almonds, and honey

Recipe: Ratatouille Risotto

This is one of those “best of both worlds” type recipes. Combining all my favorite things about ratatouille and risotto until they meld into one extra delicious food is a feat. This is a bit busy as a recipe but the end result is well worth the effort and it certainly makes sure you’ll get your daily dose of vegetables in one sitting.
