Mulled Wine Cupcakes
Preheat the oven to 350°F. Line a 6 piece muffin tray with muffin cases.
In a large bowl, cream together the butter and sugars until pale and fluffy then Add the egg and mix well.
To this add the spices, wine, and orange juice and mix until the batter is evenly combined.
Fold in all the dry ingredients with a metal spoon until just combined. Divide the mixture evenly in the muffin tin and bake in the oven for approximately 20 minutes.
To make the icing combine butter, orange juice, zest, cinnamon, icing sugar, and mascarpone in a bowl and beat using an electric mixer until smooth
