Recipe: Scallion Pancakes

These are like naan on steroids. They’re very unassuming but they were super quick to make and absolutely delicious. I didn’t do a great job at pan frying but they still were crispy and crunchy and completely satisfying. I made the dough the night before and then fried them up in the morning so that’s an option if you’re a little low on time or you like to last minute cook in the morning.

Recipe: Homemade Ravioli (Cheese, Pea, and Mint)

I’ve had “make ravioli” on my to do list for about 8 years and I finally did it and guess what: it was great! It probably would have been a lot easier with a pasta sheeter but doing the whole process by hand was actually not hard or that time consuming. It’s the type of recipe that you struggle with the first time but I feel like you’d get exceptionally better after 3-4 times. This is a recipe you can use to impress EVERYONE but also it was just very fresh tasting, cheap, delicious, and worth a try.

Ive been so consistant this year with making lunches and posting them that I feel extra super proud every time I managed to make 5 a week even though I probably shouldn’t feel that elated with, you know, feeding myself. There’s only 13 more weeks in the year though so I’m going to have to plan hard if I want to make more new things in that time!

Easy menu for my SO’s birthday week but delicious none the less. It was getting colder outside but this week it’s unexpectedly warmer so I guess we’re holding off on completely proper fall for just a little while longer.

Just some good ol’ fashioned salads populating lunch this week. I don’t know what it is about salad except that it’s super easy and Andrew likes it so I try not to fight against the tide too much but also I kind of hate the quiet complacency of salad?

I made all five lunches for this week and I feel good about it because I didn’t waste any food and I managed to only make food that tastes great so that always makes me happy.

This is a very ambitious menu that banks on me wanting to cook and make many different things but somehow all my side dishes are still boring (!) but we’ll see how it shakes out. Now that’s colder outside, cooking does look much more attractive as a pastime.
