This weekend we get to celebrate a friends birthday in a medieval tower and I couldn’t be more excited about it. The weather has been really great too so hopefully I can easily transition from heavy winter dishes to something more light and spring-worthy.

Turned out that making sushi rolls with the rice on the outside was much more difficult so next week I’m going back to some old standbys to get my confidence back up but this week was pretty neat and experimental at least.

This was a really great week for making food. Lots of different types of things and I managed to do all the things I actually wanted to do so I feel really great about these even if I overcooked the boiled eggs (!) which is something I almost never do but oh well, still delicious.

Recipe: Mushroom Tortellini

I found making tortellini much easier than ravioli so if you have given up on stuffed pasta due to ravioli I’d urge you to give it a second try with this recipe. I don’t have a pasta sheeter OR cutters OR even a pastry bag and I still found this recipe actually not too bad and I’ve made it a few times over. I made way too much filling the first time so I had to make multiple batches of pasta dough and it does get easier but tortellini does also take a good amount of time. I’ve found it takes me about 30 minutes to fill and fold about a pound and a half worth of pasta but your mileage may vary.
