Long time no menu! I’ve decided to update this site in a lot of ways and one of my big projects for the year is to remake recipes with bad images and updating them. My new plan is to only publish less new recipes (maybe 1-2 a month) and instead update old recipes. There’s already well over 250 recipes on this site and I think they’re all boring at this point so I want to branch out a little bit more. In the meantime I hope to post more menus, for bentos you’ll have to go to @mabmadefood and maybe I’ll do a better job this year of posting there as well.

Who doesn’t like a good chicken parm? This isn’t exactly a complicated recipe but it’s also not an easy one because you have to do a lot of things at the same time. I love making chicken parmigiana on the odd occasion but the problem is that you need up with a lot of dishes so if you don’t have a dishwasher (like me), you may want to keep this one for special occasions only. It’s a total crowd pleaser though so don’t hesitate to make it for a crowd.

You can make this soup extra creamy either by adding more potato chunks and/or by blending as much or as little of the soup as you like. The soup itself has a really simple taste and it pretty satisfying stick to ribs making it a perfect soup for any chilly day. As a bonus it’s made of ingredients that are cheap most of the year and are generally in my pantry so it’s perfect for a last minute meal.

This isn’t a showstopper visually but these tiny little cupcakes pack a delicious butter and cinnamon flavor that pairs perfectly with coffee or tea. These cupcakes are best with an extra generous layer of topping so feel free to make extra for an extra decadent experience. While the recipe seems more complicated than your average cupcake the bonus is that all the work is done before you put them in the oven so once they come out and cool they’re immediately ready to eat – no frosting or decoration necessary.

I think people are really intimidated by making pie but this is my first time making my own pie crust and I found it actually fairly straight forward. This is actually much easier than it seems on the surface but it does require that you properly rest the dough so it needs to be planned out ahead of time.

This is a very quick naan that doesn’t need yeast and takes less than 20 minutes to make from start to finish. It doesn’t quite give you the same exact pillow-y texture that a yeasted dough would but with the layer of cheese (or anything else you decide to put inside) it makes a good last minute attention if you’ve forgotten to prep dough.

Most of the time you’ll spend making these will be in assembly but they don’t really take much to assemble either. The flavor of these cupcakes is a really perfect blend of flavor. They look sweet but they have a really nice balance between the sourness of cherries and the savory frosting to go with the chocolate cake. These are really delicious and I recommend making them the next time you need cupcakes.

This soup is really light but filling. It’s basically a tomato soup with noodles but because you toast the noodles beforehand they have this perfect texture with just a bit of bite on the outside. It’s perfect with a nice thick bread or roll. I like texture in my soup so I add chopped vegetables to the base but if you want less work you can simply make this with canned tomatoes and a good instant stock base.
Sopa di Fideo

Sometimes you just want something in nugget form but you also want vegetables and this is basically the perfect fusion of those two ideas. These are pretty easy to make if you use a food processor to chop up the vegetables and if you bake them in the oven they’re really low effort but they do taste much better when pan fried. Depends on if you’re willing to spend a little more effort for better tasting food.

Perfect for a weeknight meal, made easily with things you probably have laying around the house and all you have to do is chop an onion this curry is filling and rich and is vegan if you swap the traditional cream for coconut milk instead. Really delicious with naan.
