Line a baking sheet with parchment paper and preheat an oven to 200°C
Unroll the puff pastry sheet then cut the pastry into even pieces of the desired size (this was about 24 squares for me) and brush egg wash over each piece.
Place one square on top of another to make a stack of two piece with the egg wash side up and place them on the prepared baking sheet and repeat with the rest of the pastry.
Bake for 10 minutes, remove from the oven to place a slice of brie on each puff then put back in the oven and bake about 2-3 minutes watching carefully, removing when the cheese has melted but not begun to leak or burn.
Top each puff with a small dollop of cranberry sauce and a few fresh herbs.
