Cinnamon Sugar Doughnut Holes

 125 g flour
 65 g sugar
 10 g baking powder
 5 g salt
 3 g cinnamon
 2 g ginger
 25 ml oil
 1 egg
 115 ml milk
Coating
 100 g sugar
 5 g cinnamon
Directions

Heat 6cm of oil in a dutch oven/cast iron pan to 190°C.

Mix together all batter ingredients in one bowl, adding more flour or milk to make a paste-like consistency.

In a separate bowl mix the coating and set aside.

Use a small scoop to drop teaspoonfuls of batter into the hot oil, 5 to 6 at a time, making sure not to overcrowd the oil.

Fry for about 60-90 seconds on each side until browned then drain on a paper towel until cool enough to touch.

Roll the warm doughnuts in the sugar and cinnamon mixture until coated.
