If you’re looking for a savory twist on waffles this is a great and super easy to achieve it. I served these with some salsa and a runny fried egg and they were a super not too difficult weekend breakfast meal. The masa harina gives the waffles a chewy but not too dense texture. These would probably be good with a runny queso as well.
Masa Harina Waffles
In a large bowl, whisk together the masa harina, cornmeal, sugar, baking powder, salt, and spices and in a separate bowl whisk together the eggs, milk, oil, and melted butter.
Add the liquid ingredients to the dry, stirring until combined and let rest for 5-10 minutes while you preheat the waffle maker.
Do not stir the batter but simply scoop out a portion of batter to fill the waffle well 3/4 of the way full and close the waffle ironing cooking until it browns slightly on both side and releases from the waffle maker easily.
