In the original recipe they put a glaze on these and I was about to make one but decided to try one without it and I have to say, they don’t need it at all. These rolls are gooey and spicy and apple-y. I kind of cheated by freezing some local apple slices at the height of apple season to use but probably regular good quality apples will produce something really delicious.
Apple Cinnamon Rolls
Make the apple filling: Melt butter and cinnamon in a saucepan then once the butter is melted stir in apples and sugar and a small amount of water. Cook for 5-6 minutes until the apples are soft and the sugar has started to brown. Combine cornstarch with some water then pour into the saucepan and stir until thick. Turn off the heat and let cool completely.
Make the dough: Combine warm water, warm milk, butter, yeast and sugar in a large bowl and let for 5 minutes until yeast has bloomed.
Add to the bowl the flour and salt, mix together until a dough forms and then turn out on a counter and knead on a lightly floured surface for at least 10 minutes until the dough becomes smooth (or in a stand mixer with the dough hook for 8 minutes). Grease the bowl, cover with a wet tea towel and allow to rise for 1-2 hours.
Assemble the rolls: Grease a 9x9" pan. On a floured surface, roll out dough into a 9"x5" rectangle.
Cover the dough with a layer of butter then sprinkle the brown sugar and cinnamon over that butter. Top with apple filling leaving a small gap at the edges. Roll the dough into a log and divide into 9 even pieces. Place the rolls in the pan and cover with a dish towel for 60 minutes.
When ready to bake, preheat the oven to 190°C and Bake 20-25 minutes or until golden brown on the top.
