If you left your tortillas on the counter last now and they are now hard tack or if you have leftover tortillas but not enough to actually fry for chips this is the perfect way to use them up. Migas is supposed to be finest hangover cure as well and considering it’s a bomb of protein and carbs that’s probably not completely inaccurate but I’d stick with the fact that it’s a nice breakfast.

Recipe: Potato Dumplings
Are these going to win an award for attractiveness? No. But they are really delicious and really simple to make. These are of the multitudes of recipes that calls for “leftover mashed potatoes” which I don’t actually believe in but if you want to eat potatoes but don’t exactly want mashed potatoes this is a great inbetween recipe. This could be the main dish or a side dish and you can make the mashed potatoes ahead of time so that it only takes 15 minutes for an easy last minute dinner.

The thing that separates this Iranian bread from other bread is a thick glaze that goes on before baking – a mixture of flour and oil that gives the top a nice crunch. It’s technically called a flat bread but it’s not quite flat, half-flat bread.

I love this recipe. It’s quick, it’s delicious, you can serve it on top of any carb you have on hand : rice, noodles, couscous, spƤtzle, even a baked potato. You do you. It also is made of very simple ingredients that I tend to have on hand and you only have to chop an onion and some mushrooms. If you add in some frozen peas or spinach you can get some green vegetables in there too and it’s just a nice balance of quick, easy, cheap, and delicious you don’t find in most recipes.

I don’t even like chicken nuggets that much but for whatever reason I really like turning non-chicken things into nugget form. These chickpea nuggets are really great and they can be baked instead of fried (or baked and then pan fried if you like them extra crispy) which makes them really easy to store if you make them all at once. They’re basically the perfect combination of a vegetable fritter and falafel if that’s something you need in your life.

I guess the common name for making pull apart bread like this is “monkey bread” but out of all the names I really like “bubble bread” personally. This is a pretty standard recipe for garlic rolls / garlic knots but made into small pieces that make it really fun for a party and to share. This looks like it would take a lot of work really it’s probably only five extra minutes of work to dunk the balls in garlic-butter. If you don’t have a bundt pan then simply place a ramekin in the center of a round tin like I have.

You can make this soup extra creamy either by adding more potato chunks and/or by blending as much or as little of the soup as you like. The soup itself has a really simple taste and it pretty satisfying stick to ribs making it a perfect soup for any chilly day. As a bonus it’s made of ingredients that are cheap most of the year and are generally in my pantry so it’s perfect for a last minute meal.

This is a very quick naan that doesn’t need yeast and takes less than 20 minutes to make from start to finish. It doesn’t quite give you the same exact pillow-y texture that a yeasted dough would but with the layer of cheese (or anything else you decide to put inside) it makes a good last minute attention if you’ve forgotten to prep dough.

This soup is really light but filling. It’s basically a tomato soup with noodles but because you toast the noodles beforehand they have this perfect texture with just a bit of bite on the outside. It’s perfect with a nice thick bread or roll. I like texture in my soup so I add chopped vegetables to the base but if you want less work you can simply make this with canned tomatoes and a good instant stock base.

Sometimes you just want something in nugget form but you also want vegetables and this is basically the perfect fusion of those two ideas. These are pretty easy to make if you use a food processor to chop up the vegetables and if you bake them in the oven they’re really low effort but they do taste much better when pan fried. Depends on if you’re willing to spend a little more effort for better tasting food.
