Recipe: Matsutake Soup

This is such a simple soup but it has wonderful flavor and the yuzu and dashi really bring out the best of the mushroom. I added some chili flakes also for a nice spice, this is basically the perfect fall soup. Mild, comforting, warm with just a little zing.

Ingredients
 1 cup matsutake mushrooms
 8 oz tofu
 4 green onions, chopped roughly
 yuzu zest
 2 cups dashi
 1 tbsp sake
 2 tsp mirin
 2 tsp soy sauce
 salt, to taste

Directions

Clean the mushrooms with damp paper towel and cut them into thin slices.

Bring the dash to just under a boil then lower the heat to medium and add all of the ingredients.

Simmer for 5 minutes until everything is heated, and adjust seasoning to taste, and serve piping hot.
